Every year on 20 October, the global culinary community celebrates the passion, creativity, and dedication of chefs around the world. In honor of International Chefs Day, Sodexo Indonesia marked the occasion through its flagship culinary development program, Chef Signature 4.0.

Organized in collaboration with ABC Foodservice, the program served as a dynamic platform to strengthen culinary capabilities within Sodexo while celebrating the artistry behind every dish we serve.

The “Duplicate Dish” Challenge

The highlight of Chef Signature 4.0 was the “Duplicate Dish” Challenge, a unique culinary test that required Sodexo chefs to recreate high-end Western fine dining dishes with remarkable accuracy.

Rather than presenting dishes from their own repertoire, participants were challenged to replicate specific dishes using carefully selected ingredients provided by ABC Foodservice. This format tested multiple aspects of their culinary expertise, including:

  • Sensory precision to identify herbs, seasoning, and flavor balance

  • Technical skills in applying Western cooking techniques and achieving the perfect doneness

  • Presentation artistry to match the elegant plating styles of fine dining cuisine

Learning from the Best

To elevate the experience, Sodexo welcomed Chef Aliance T. Mulia, a renowned chef from a prestigious five-star hotel, who served as mentor and judge throughout the event.

Chef Mulia provided valuable insights into modern culinary techniques, ingredient pairing, and the discipline required in professional kitchens. His mentorship offered participants a rare opportunity to gain firsthand knowledge from the world of luxury gastronomy.
